Greenpeas Stir Fry

Greenpeas

Ingredients:
2 cups green peas
1 medium size onion, chopped fine
3 green chillies, slit
2 tbsp grated coconut
1/2 tsp turmeric
1 tbsp finely chopped cilantro
salt to taste
For seasoning -
1/2 tsp mustard seeds
1/2 tsp cumin seeds
a pinch of asafoetida
oil
Method:
Heat oil in a pan. Add mustard seeds; once they begin to pop add asafoetida and cumin seeds. Let the cumin sizzle then add onion and chillies. Saute until the onion turns slightly golden.
Add peas and turmeric and season with salt. Add a little water and cook until peas are tender.
Sprinkle grated coconut and cilantro on top and serve hot

Grilled Shrimp & Vegetables

Shrimp

Summer got Started so do the Farmers market, I found lovely jumbo shrimp’s and lot of baby vegetables and thought of grilling them with some Indian spices…sounds delicious right…viki wasn’t sure about it but he was confident after having tilapia grilled fish…..I used the same common ingredients which I used it for tilapia fish…but little variation

Here is the recipe of Grilled shrimp and Vegetables

Ingredients for shrimp:
1 lb peeled, divined shrimp (any size)
olive oil
Chili powder
garlic salt
Chat Powder
Coriander Powder
1 lime
Method for Shrimp:
Drizzle enough oil over the shrimp to coat. Sprinkle Chili powder, garlic salt and Chat Powder and Coriander Powder, to taste (I use about 1/2 teaspoon of each for 1 lb of shrimp).
Place on wooden skewers which have been soaked in water for 1 hour.
Put on grill, cooking until shrimp tails turn white. Flip and cook for 1 1/2 to 2 minutes more (depending on size).
Squeeze lime over the cooked shrimp and serve as an appetizer

Vegetables

Ingredients for Vegetables:
Baby Potatoes
Mushrooms
Baby Tomatoes
Zucchini
Green Bell Pepper
olive oil
Chilli powder
garlic salt
Chat Powder
Coriander Powder
1 lime

Method for Vegetables:
Drizzle enough oil over the all the vegetables to coat. Sprinkle Chili powder, garlic salt and Chat Powder and Coriander Powder, to taste (I use about 1/2 teaspoon of each for 1 lb of shrimp).
Place on wooden skewers which have been soaked in water for 1 hour.
Put on grill, cook all the vegetables till they have grill marks. Flip and cook for 1 1/2 to 2 minutes more (depending on size).
Squeeze lime over the Vegetables and serve as an appetizer

Fish marries Lime Lover : Tilapia with Lemon

Fish

When the summer arrives, in my block each and every guy sets their grilling station and starts grilling.
This time even I thought to do some grilling but I don’t like to do it outside….as I being very lazy these days thought of utilizing my Cast iron Grill pan.
Hurray!!! At last I inaugurated the pan ……..but the next thing came into my mind ……what should I grill…..hmmmmmm……I thought ok lets start with the Tilapia fish as viki loves fish and I love to see the smile on his face…So all set to Grill the fish

Here is the recipe
Ingredients:
1lb Tilapia Fish cut them into small chunks(any size)
olive oil
Chili powder
garlic salt
Chat Powder
Coriander Powder
1 lime

Method:
Drizzle enough oil over the fish to coat. Sprinkle Chili powder, garlic salt and Chat Powder and Coriander Powder, to taste (I use about 1/2 teaspoon of each for lb of Fish).
Put on grill, cook until the fish cooks nicely. Flip and cook for 1 1/2 to 2 minutes more (depending on size).
Squeeze lime and the thin slice over the cooked fish and serve as an appetizer
