From last couple of days I took care of all vikis demands related to food, but I also felt very bad for santu (my bro-in-law). So today i thought to satisfy santu’s tummy and thought to make his favorite telangana style egg curry. It’s a very simple recipe where you just need to add onions, egg and few spices that’s all and you are done. If there are any egg lovers out there in your family like in my house they will love this recipe and they might insist you to make it again and again.
Here I go with the recipe:

Ingredients :
6 eggs
4 big size white onions
1/2 tbsp Ginger garlic paste
1/2 tsp turmeric powder
1/2tsp cumin seeds
1 tbsp chili powder or as per your taste
1/2 tbsp garam masala powder
1/2 tbsp Coriander Powder
2 tbsp oil
Salt to taste

Method:
First chop the onions roughly cube size shape. Take a pan and heat the oil, first add turmeric powder, cumin seeds. After couple of seconds add Ginger garlic paste and onions, now the onions properly on medium heat,
After 5 min when the onions get little transparent add salt and chili powder now mix them properly. Now crack the eggs and add them directly on the onions. After your done with all the eggs add garam masala and coriander powder on top of the eggs, now cover the pan with the lid and cook it medium flame for around 15 min. Now remove the lid and mix the curry properly without breaking York. Now cook the curry for another 5 min.
Valla telangana egg curry is ready. Serve the curry with hot puris or chapathi’s.
Your tummy will be completely satisfied I can bet you on that:)

Every Friday we have adapted a new comfort food trend, viki loves wine which I have mentioned it before, his first choice is always Zinfandel and to go with the tasty zinfandel wines I tried couple of my experiments like chicken65, veggie Manchuria and other. Then I tried to bake some nice warm curry puffs or chicken puffs or egg puffs (viki doesn’t like red meet and I like to avoid cooking red meat bcs of health).
Regarding puff pastry so many people asked me whether I made my own pastry dough or store box…usually when I am free with school I like to make my own pastry dough, there are couple of reasons for that I can use fresh butter with cholesterol free, it is cost effective and I can cut down the calories using little butter.
But I also buy store box for emergency. So I would say it all depends on my mood and the quantity left in the freezer.
Ok coming back to my experiments this time I tried using allu-methi. It was so yummy that I finished couple of them instead of viki; usually it is always other way around.
Those warm puffs were so tasty with zinfandel wine I would really recommend u guys to try this simple pleasure
Here is the recipe:
Ingredients:
2 large Potatoes – peeled and cubed
2 cups of Methi Leaves
4 tablespoon Oil
½ tablespoon cumin seeds
2 Onions (chopped)
5 Green Chilies (chopped)
1 inch Ginger (finely chopped)
2 tbsp chopped Coriander leaves
¼ tsp Turmeric powder

Method:
Now take few Puff Pastry Sheets (Store box or the pastry which you have prepared) from the freezer and keep them outside. (It should be out for 40 minutes approximately before using. So first keep them out and in the mean while start making curry. )
Heat oil in a pan and crackle cumin seeds.Add onions and fry till light brown.
Add the rest of the ingredients and stir-fry for 5 minutes. Add salt and a little water.
Cover and cook them in their own moisture till the potatoes are done.
Now take the puffs and cut nicely wherever there is a folding. You will 6 sheets from one packet. Again cut each sheet into half. Then you will get 12 pieces from one full packet.
Take a sheet and test it. The sheets should not be hard. It should be soft and foldable. Then it is right to use. If it’s not … wait for some more time till you are able to fold it.
Pre-heat the oven at bake and 350 degree.
Take water in a small bowl. Dip one of your fingers into the water and apply water to the 4 edges of the piece.Now take full spoon of the curry and place it on the sheet.
Close the edges nicely. Make sure the edges of puff stick properly.
In the same manner stuff the curry into the puffs.
Place the stuffed puffs in an aluminum foil or cake pan or persulin plate. Anything is fine.
When the oven is pre-heated, keep the plates in the oven carefully.
Keep the thicker one on the bottom grill of the oven and keep the aluminum foil on the top of grill.
Bake it for 30-35 minutes till the upper layer of the puffs turn to brown color and crispy.
Turn off the oven switches, keep the oven open and wait for 10 minutes.
Serve these yummy puffs with Ketchup or green chutney.

Another blow to my childhood memories, one of my favorite childhood memories is the time I spent in Nagpur with my grandparents, especially all those fetival holidays spent in MECL flats. Prior to Ganesh Chathurthy, all guys used to go to market and bring a big Ganesh murthy (idol) and used to establish the murthy on the ground floor.On the other side of the corridor we all used to participate in small competitions (like drawing,skipping,antakshri,crafts and many more), it used to be so much fun :)
On Ganesh Chathurthy, everybody used to gather early in the morning and used to do Puja, and after that there used to be a potluck party and we all used to stuff our stomach’s:). I was googling about Ganesh chathurthy puja and here I found really good information and thought to share with you guys.
