Chicken Poppers with mexican sauce

Ingredients:
2 Cups All Purpose Flour
1/2 Cup Corn Starch
1 Cup water
1 Tbsp Baking Powder
1 tsp Black pepper
Salt to taste
1 Cup Low fat Cream cheese (Dont use Fat free Cream Cheese)
1 Cup Mexican Cheese Blend
2 Cup Shredded Chicken ( You can use Poach chicken or roastery chicken or Grilled Chicken)
2 cans Whole Pickled Jalapeno peppers ( you can find them in mexican aisle)

Method:
Thorougly combine (Cream cheese, Cheese and Chicken) all the ingredients in a small bowl and keep it aside. Now take another bowl and combine All purpose flour, Salt, black pepper, baking powder and water breaking up the lumps until it is a smooth thick batter.
Take the peppers out of the can and wash them properly. Now cut the Pepper in middle and remove the seeds, stuff the cream cheese and chicken mixture in the peppers.
Now In a small bowl or in a zip lock cover add corn starch flour, Now Hold each pepper, dredge in the corn starch flour, shake off excess , dip each in batter and allow excess to drip off.
Heat oil in a deep fryer upto 350. Drop each Pepper into the hot oil and cook until golden brown about 1/2 to 1 minute on each side. Do not crowd the fryer. Drain the peppers on paper towels and Enjoy the peppers with nice cold mexican salsa or mexican three cheese sauce.

Ingredients:
2 Cups All Purpose Flour
1 Cup Corn Starch
1 Bottle Beer
1 Tbsp Baking Powder
1 Lb Shrimp (Peeled , Dont remove the tails)
1tbsp Red Chilli Powder
1 tsp Garam Masala
1 tsp Methi Leaves
1 tsp Chat Powder
1/4 tsp Turmeric Powder
1/2 Lime Juice
Salt to taste

Method:
Thorougly combine all the above ingredients in a small bowl (except shrimp ), breaking up the lumps until it is a smooth thick batter. In a small bowl add some more corn starch flour, Now Hold the shrimp by the tail, dredge in the corn starch flour, shake off excess , dip each in batter and allow excess to drip off.
Heat oil in a deep fryer upto 350. Drop each shrimp into the hot oil and cook until golden brown about 1/2 to 1 minute on each side. Do not crowd the fryer. Drain the shrimp on paper towels and serve immediately with hot sauce or any kind of dipping you like.

Enjoy the Shrimp while watching the big game with nice cold beer

Ingredients:
2 cups All Purpose Flour
1 cup Rice Flour
½ Stick Butter
2 tbsp Tymol Seeds
¼ tsp Asafetida
1 tsp Red Chili Powder
2tbsp white Sesame Seeds
Salt to taste
½ tsp Baking Soda
Water (sufficient for making dough)
Oil for frying

Method:
First in a bowl mix all the dry ingredients together (All purpose flour, rice flour, Salt, Red chili powder, Asafetida, baking powder, tymol seeds and sesame seeds).
Heat butter in a pan after the butter melts, add water and bring it to boil. Now slowly add the dry ingredients and mix it properly without lumps. Now remove the mixture from the pan and knead the dough on the dry board with little oil in a hand. Take small amount of dough and shape it into small rings. Repeat the process for the remaining dough. Allow these rings to rest for 1/2 hr on a greased surface.
Take a deep frying pan and heat oil on a medium heat (375 C) and fry those rings on a medium heat until crisp.

Note: You don’t want your dough to be sticky so if it has too much water or is too sticky to you can add a sprinkle of flour to the dough and continue kneading.

This week was a busy week for both of us, hubby dear is travelling almost 300 miles every saturday….But this weekend he is not going to travel and we both will be able to watch SuperBowl Game………Hurray…….
So I thought to make some Spicy Popcorn and Mango Martinin……..which came out pretty good….and we both lounge on the couch enjoying our Mango martini and nice spicy popcorn………Oh I really love this……
FACT: Did you know that popcorn is among the healthiest and tastiest snacks around? It’s a whole grain food that’s low in calories and fat and it’s a complex carbohydrate.

Spicy Popcorn
Ingredients:
1/2 Cup Kernels
Salt to taste
1/2 tsp Chilli powder
1 tbsp Oil (Canola Oil)

Method:
Take a frying pan and a fitting lid. Put some canola oil in it and wait until the pan is hot.
Now add Kernels to the pan and mix it little bit or until few of them pop up. Be sure to set the stove temperature to medium at this point or expect a lot of burned kernels.
Put on the lid fast! Make sure no corns flip out. Shake the pan a few times to make sure all corns are loose. Now you will hear a lot of pops, just wait until all sound is gone. Now add salt and chilli powder in it and shake the pan so that they mix it properly with the spice. Now you can enjoy Spicy Popcorn…

Mango Martini

Ingredients:
1 oz. Triple Sec
2 oz. Vodka
1/4 oz. Lime Juice
2 oz. Mango Juice
1 Cup (crushed) Ice

Method:
In a tall shaker filled with ice, combine all the ingredients. Shake briskly. Strain into a chilled martini glass, garnish and serve. You can garnish with lime slice or Cherry.

Mathri (Mathis) (Matti)

Ingredients:
2 cups All purpose flour
Oil for deep frying
1/2 tsp Thymol
Salt to taste
Few peppercorns

Method:
Mix all the above ingredients together along with warm water to make a stiff dough.
Divide the dough into 12 parts and make small thin rounds off each part of dough.
Prick them on both sides with a fork or knife and allow to dry a bit for 20-30 minutes.
Heat oil in a deep frying pan and fry a few at a time to a pale golden color.
Drain on a kitchen paper and allow to cool before you store them in air-tight containers.
Enjoy Mathri (Mathis) (Matti) with tea or coffee or any other drink.
